The Kambarang event is a new-age exploration of Aboriginal bush foods and flavours, reimagined using modern cooking techniques. It is an event that is gaining a lot of momentum. The menu, which is a bold fusion of local produce and foraged traditional native foods of the South West, is set to raise eyebrows and tantalise tastebuds once again at this year’s Margaret River Gourmet Escape. Sealing its reputation as one of the South West’s ‘must do’ events.

Twenty Aboriginal hospitality students from around Western Australia will prepare, cook, plate and present, what promises to be a gastronomic four-course menu.

Last year’s event showcased exotic dishes such as lemon myrtle beer battered local reef fish with quandong sea celery mayo dipping sauce, kangaroo koftas and boutique beer infused with quandong fruit.This year’s event will bring many more and will be on the menu at one of the Margaret River Gourmet Escape’s most unique fringe events.
